The Gingerbread
  1. In a small bowl mix 1 cup milk and 1 tablespoon lemon juice. This will curdle the milk, making sour milk.
  2. Take your large mixing bowl and cream together ¾ cup of sugar and ½ cup margarine.
  3. Next mix in ¾ cup molasses.
  4. Mix in ½ cup of the sour milk mixture you made in the other small bowl. (FIGURE 1)
  5. Stir in 1 teaspoon baking soda.
  6. Add ¾ teaspoon salt.
  7. Mix in ½ teaspoon baking powder.
  8. Add 2 teaspoons of ginger.
  9. Finally mix in 4 cups of flour, 1 cup at a time. *If you mix in the flour 1 cup at a time it will make it easier to beat together. (FIGURE 2)
  10. Knead the dough into a smooth shape. This is the end product. (FIGURE 3)
  11.  Cover in plastic wrap and refrigerate for 24 hours.
